Why is 'multiply by seven' wrong?

Because ageing is front-loaded. A one-year-old dog is closer to a fifteen-year-old human than a seven-year-old — it is sexually mature and nearly full-grown. Seven-times only happens to be right at about age four, and drifts either side of it.

Does size really matter for dogs?

A great deal. Small breeds live around 15 years and large ones around 11, and the difference is almost entirely after maturity: both reach adulthood at about the same age, then large dogs age faster.
