How does the page know my zone?

From the browser, which reports the zone your operating system is set to. Nothing is sent anywhere — it is read locally and used to pick a default you can change.

Why is a '9am ET' invite showing at an odd time?

Usually because ET is ambiguous — it means EST in winter and EDT in summer, an hour apart. Convert using the zone name (America/New_York) rather than the abbreviation and the daylight-saving rule is applied for the actual date.
